Dragon fruit “fruit bowl”
This fruit bowl is made with Dragon fruit (‘pitaya’ / ‘pitahaya’), strawberries and pomegranate. Although this breakfast is looking like a typical summer breakfast, you can only buy dragon fruit during winter in Belgium. I used frozen strawberries, but fresh strawberries would be so much better.
Greek yoghurt and honey caramelized apples
Peel one apple, cut it into wedges or thin slices. Put the slices in a skillet with a little bit of butter. Add one teaspoon of cinnamon and one tablespoon of honey. Bake the apple slices until they are soft and caramelized. Put some greek yoghurt into a bowl and add the caramelized apple.
Add 1/2 cup of rolled oats and a tablespoon of ground coconut (optional) into a small saucepan. Add in the coconut milk until the oats are covered (120 ml). Let the oats simmer until the milk has mostly been absorbed, about 15 minutes. Put the oats in a bowl, add your favorite fruit and superfoods.
