These coconut macaroons are the easiest cookies you will ever make. They are crunchy on the outside and chewy on the inside. You only need 3 ingredients to make these cookies, they are gluten-free and super yummy !
- 2 egg whites (medium-sized eggs, I used one egg white in the beginning but noticed the mixture was to dry so I added another egg white)
- 1 cup of shredded coconut
- 1/2 cup of granulated sugar (optional, but in my opinion, they definitely need some sweetener)
Preheat oven to 180°C (350 degrees Fahrenheit)
Line a baking tray with parchment paper
In a bowl, whisk the egg whites until frothy
Add the sugar and mix
Add the coconut and mix it carefully with a spoon
Using a small ice cream scoop (or rounded spoon), place the coconut mixture onto the cookie sheet
Bake for 15-20 minutes or until browned on top (you can turn on the grill function after 15 minutes but make sure you watch the cookies)
Let them cool before eating
- Optional: dip the cookies in some dark (white or milk) melted chocolate or drizzle some chocolate on top
These cookies are simple to make and even more delicious when dipped in some chocolate. It’s a nice cookie to serve to your guests with a cup of tea or coffee.
